BIRD ROCK: Kenya Kiamugumo Peaberry. In case you don’t know, peaberries are wonderful little things; in a coffee cherry, one expects to find two flat sided seeds each other. When only one of the ovules is pollinated, peaberries occur; these develop a single round coffee seed. Peaberries may account for between 5 – 10% of a total harvest. These are sorted and separated with a sieve. Peaberries are usually uniform in size and density allowing for a consistent application of heat during the roasting process that translates into a flavorful and highly sought after cup profile.
