WEST BEAN: Brazil, Costa Rica and Papua New Guinea West Sussex blend, dark roast for espresso, or “curated” as they actually say. Brewed as well as a filter cup, too, but you probably already know that. Why they named it West Sussex is a mystery; Brazil, Costa Rica and Papua New Guinea has as much to do with West Sussex as fish have to do with bicycles. Twee lot at beanies….http://thewestbean.com

CHINGATE UN CAFE: Mexico Chiapas, Bourbon, Catuai, Caturra, Mundo Novo and Typica varietals, Full City (medium dark) roast. This is a fairly complex coffee made up of varietals that confer wide varieties of taste to the final brew. Best of all, they didn’t under roast the beans. Chingate roasts on Sunday and have the distinction of using their name without shame among English speakers unable to decipher Spanish. Good for them! http://chingateuncafe.com

MODERN TIMES: Mexico Chiapas San Cristobal single origin, washed process, correctly roasted. Modern Times is going through some changes and may not exist as we know in the next couple of months, so its wise to acquire their coffees now. Should the brewery go the way of the dinosaur, some bright bunch of lads and lasses need to rope up that amazing, one of a kind Giessen roaster and haul it somewhere it can continue to do its stuff. The roaster, vaguely resembling a steam locomotive, is a kind of cultural artifact. http://moderntimesbeer.com

APERTURE: Sumatra dark roast, Tim Tim, Typica, Ateng, Onan Ganjang, Jember varietals, wet hulled process common to Sumatra; Kenya Othaya, washed process, SL28, SL34, Ruiru 11, and Batian varietals, dark roast; Uganda medium roast, Bourbon: SL14, SL28, and Blue Mountain varietals, washed process. These are some complex coffees; Jember and Blue Mountain varietals are less common in the States than they should be. http://aperturecoffee.shop
