STEADY STATE: Costa Rica Turrialba, Aquiares Farm, H1 Centroamericano F1 Hybrid varietal, anaerobic process, light roast. The varietal is a recent hybrid, of which these are some of the first commercially available coffees of the type. It is also particularly well adapted to anaerobic process since the high mucilage content of the bean fosters yeast growth which flavors the drying coffee.
