FREQUENT: Colombia Cauca, Finca El Pariaso, anaerobic process during which the cherries are inoculated with a YN-09 strain of Saccharomyces cerevisiae (beer yeast); Castillo varietal, washed/shock finished; sugarcane process decaff.
