STEADY STATE: Ethiopia Yrghacheffe Koke Honey, sweet process fermentation, said to be versatile for brewing and pairing methods. Roasters state they find it particularly well paired with milk…of all things. Sweet process means harvested coffee cherries are fermented with skin left for two days prior to being pulped. The pulped coffee is then dried on raised beds to its optimal humidity. This ferments and sometimes adds sweetness to the finished bean. http://steadystateroasting.com
