TODAY’S COFFEES roasted in San Diego on 7/30/21:

STEADY STATE: A unique (only 60 lbs. worldwide) lot of Panamanian Victor Rojas coffee, beans static fermented prior to roasting at 401 degrees that yield a bright, green apple-like note to the beans. Used as pour over, they are today experimenting with it as an espresso. Available at $37 per 12 oz. bag.

MOE COFFEE: A Colombia/Sumatra blend.

REVOLUTION ROASTERS: A single origin Panama, and the Smooth Operator Blend–Brazil, Mexico and Papua New Guinea. Light/medium roasts.
