VIGILANTE: Ethiopia Sidama Betibiroti, 74111, 74112 varietals, experimental cold carbonic process: Mature coffee cherries left in stainless steel cylinders with water and carbon dioxide to slow the breakdown of sugar. Inoculated with yeast to speed fermentation and held in carbonic state for 120 hours, then dried. Recommended by the roaster for filter cup brew for best body; thicker with french press. 1:15 coffee/water ratio at no warmer than 205 degrees F. http://vigilantecoffee.com
