CHUCK ROASTS COFFEE: Colombia Nogales, Java advanced fermentation; Huila, Java varietal, hot water soaked, fermented with yeast; said to add sugars and thus flavor coffee with deeper character. If this were anyone else’s claim, I wouldn’t bother passing it on, but Chuck knows what the hell he’s doing and has proved that for decades.
