VIGILANTE: El Salvador Las Veraneras anaerobic natural process, bourbon and San Pacho varietals, light roast, filter cup or pour over recommended brew method at coffee/water ration 1:15 at 203 degrees F. http://vigilantecoffee.com

HOUSE OF BLACK: Mexico Chiapas, caturra & bourbon varietals, single origin, light roast, recommended for filter cup and pour over. Fair Trade Organic, washed process. Mex Chiapas tends to have hardier body than nearby Guatemala Huehuetenango; this is the result of slight differences in soil chemistry. This bodes well to be exemplary of the kind, though ESPRESSO has yet to sample it. Chiapas often tends to brighter, vivid flavors. http://hobcoffee.com
